Who Was the First?

I asked myself:
“How was it possible? Who could have been the first person to even think: look, if we pull this root out of the ground, peel it, boil it, mash it with salt, shape it into a ball, flatten it… and just like that, however each person prefers, we’ll have a delicacy so delicious that one day it will become national and be sold on almost every corner of Bogotá?”
I was sitting at a square table, on an ordinary day, between the wise frailejón and the butterflies that always get excited with so much cacao fruit. I stared carefully at the shaman painted on the walls and, of course, I asked myself the same question so many people ask me now.
On every Food Tour in Bogotá, many visitors ask me the same thing when they see that brown, wrinkled, dirt-covered root.
“Yes, it’s a root,” I tell them. “Believe it or not, we eat a root.”
And then she insisted:
“But how was it possible? Who could have been the first to think: look, if we pull out the root, peel it, boil it, mash it with salt, make a ball, flatten it, and fry it in hot oil…?”
A delicacy so delicious, so ours, that today it’s sold on almost every corner of Bogotá.
“How did anyone come up with it? Who was the genius—if it was just one?” she continued.
I imagine a native man or woman showing the discovery to their companions, eating first so the others wouldn’t be afraid of poisoning themselves with that new thing that came from the earth and that they had never seen before.
And then I remember—so I can answer her, the tourist, and myself the first time—the words a mamo once told me in a tribe I visited years ago:
“Sometimes it’s simply like that. There’s no need to overthink it or ask too many questions. Just enjoy it: it’s here now. And we won’t have to endure stomach aches anymore just to try it.”
